Table Talk

So this is how Christmas is done right, isn’t it: You sit down at a big table with your nearest and dearest, feast without limits, drink too much, discuss and waffle on, hug each other, forgive each other one or two things that happened in the past year. Cheeks are aglow, the next course is served, the napkins are stained, the floor is covered in wrapping paper. When the last candle has burnt down, the hearts are still on fire. If you look at it that way, everyday is Christmas at Studio Olafur Eliasson. Up to 90 people sit down to eat lunch together daily at the Icelandic artist’s long table. And now, we can all be part of it. The favourite 100 vegetarian recipes have been put together in one fantastic book. On the one hand, this book makes you want to organise a gigantic room with a looooooong table for yourself and invite all your friends (the recipes are adaptable for groups of up to 60). On the other hand, this creation inspires all kinds of thoughts revolving around eating and cooking. Because ‚The Kitchen‘ is more than a cookbook. It tells the story of the studio and presents people who are passionate about culinary arts. It confronts with ideas about working and eating and shows how closely these two aspect are tied together. You can’t study on a full stomach? Fiddlesticks. The best ideas are born when we sit down to eat together!

If I Only Knew…

How exactly does our brain work? How did the universe come into being? Why are some brands successful and others not? And how can I get a grip on that migraine? We want to know everything and so often, the answer to everything seems just one click away. But most of the time, what we read in forums, Wikipedia articles and social media posts doesn’t really lead to satisfactory enlightenment or life-changing insights. Information yes, knowledge no. Why can no one answer the questions of our time in digestible portions, so that we can not just hear them, but understand and take them with us. The founders of Highbrow asked themselves exactly that question. And answered it themselves straight away: Highbrow fills our daily knowledge gaps with free courses that we can have sent to our inbox daily. Divided into 5-minute-workshops, the courses on offer from the areas art, philosophy, history, cooking, science, nature, languages, etc. make us a little wiser each day. If you don’t want to specialise on one area of expertise, you can just browse through all of them merrily – or take on the Highbrow Challenge and let chance decide what you’ll learn every day for 30 days. So now you know. A little more each day, that is.

Name: Sarah Britton
Age: 33
Home: Copenhagen, Denmark
Profession: Holistic Nutritionist, Food writer, Recipe developer
Shoe size: 39
Favourite dish: Anything with avocado :)

Where are your roots?
My roots are buried deep in Canada, where I am originally from. Hoping to move back someday…

What was the last thing you had to eat?
I had a big spinach salad with chickpeas, sweet potato, peppers, homemade sprouts and avocado.

What do you tell people, who say the vegetarian lifestyle doesn’t provide you with enough nutrient?
We need to get over this HUGE misconception! It is easy to get enough nutrients on a plant-based diet, so long as you’re eating whole foods in proper balance.

A recipe anyone can accomplish?
My recipe Four Corners Lentil Soup, which can be found on my blog and in my cookbook. It’s a great place to begin if you want to eat healthier, especially if you’re pressed for time and on a budget.

What is your favorite time of the year?
Summer! I love swimming and generally being outside, so the warmer months are my favourite.

You meet yourself at the age of 18. Which advise would you give to yourself?
I would tell myself to stop obsessing over being skinny. One thing I’ve learned through my studies is that women are supposed to have curves! I can confidently say that I am the healthiest I’ve ever been, even though I am not stick-thin. I am proud of my body and love it so much just the way it is!

What was your favourite food when you were a child?
Hot dogs!

Your greatest masterpiece yet?
My cookbook. I have never put so much time, energy and sheer love into anything in my life. It was an incredible project that I am very proud of.

What did you dream of last night?
I dreamt I was traveling through Provence, France.

With which famous person (dead or alive) would you like to go out for drinks?
Alice Waters

What would you cook for us if we came to visit you?
Something seasonal and hopefully with local ingredients. I never know until I go shopping! :)

What are you afraid of?
I’m afraid of how much our dietary habits are damaging the environment. I’m afraid that because of the poor choices we are making today, that my son’s world will look very different.

What would you change in the world if you’d have the chance and the power to?
I would encourage everyone to adopt a plant-based lifestyle!

When was last time you tried something new and what was it?
I tried black garlic recently and loved it. I am using it in everything from soups and stews to sauces and dressings. YUM.

What should no one know about you?
That I read cookbooks instead of literature.

Last words: I’m very grateful to have so many readers in Germany and so thrilled my book has now been translated! I love this country so much <3
